And in this cookbook, Blumenthal delivers. There's a huge section at the back with interesting, brief academic articles about food science. I glanced through it with Betsy, my company's resident food scientist, and we both oohed and ahhed.
The photos are dirty tastic. Food porn at their porniest. And plenty of equipment shots for those who geek out on the latest centrifuges.
